Paper steamed Curried Fish with Sweet Potatoes


Serves 4

6 baby sweet potatoes
Salt and pepper
1/2 cup chopped fresh herbs (dill, parsley, coriander)
Olive oil
4 fish fillets
2 Tbs curry powder
Salt and pepper
4 sheets baking paper
1 lemon, cut into quarters


Preheat oven to 180c

Pierce sweet potatoes with a fork, then microwave until soft (about 8-10 minutes)

Cut sweet potatoes in half, then sprinkle with salt, pepper, herbs and a drizzle of olive oil.

Season the fish with curry powder and season with salt and pepper.

Place a portion (3 halves) of sweet potato onto the baking sheet, top with the fish, then squeeze over the juice of a wedge of lemon.

Fold the paper over, fold and crimp the edge to make an air-tight seal. Place onto a baking tray. Repeat to make the other 3 parcels.

Place into the oven for 8-10 minutes until the fish is steamed.

Tear open the bag to serve, squeeze over more fresh lemon to serve.
