Sweet Mustard Chicken


Serves 4

4 potatoes, quartered
2 peppers (red & yellow), chopped
2 brinjals, chopped
Salt & pepper
Olive oil
1 whole chicken (about 2kg)
2 Tbs Zola’s Feasts Flavourbomb Spice Mix
2 Tbs Sweet Mustard Sauce


Preheat oven to 200c.

Place the potatoes, peppers and brinjals into a large roasting tray, season with salt and pepper and drizzle with olive oil.

Spatchcock the chicken by cutting on either side of the backbone to remove, then press down on the breastbone to flatten the chicken.

Drizzle with olive oil, then sprinkle with spice mix and rub all over the chicken to cover.

Place the chicken, skin side up, onto the roasting tray with the veggies.

Spread the sweet mustard onto the skin of the chicken then place into the oven to roast for 1 hour- the chicken should be cooked through and golden and the veggies tender and roasted.
