Mealie Rice [Maize Rice] Salad


Serves 4

1 cup mealie rice
1/2 tsp Salt
1 tsp wholegrain mustard
2 spring onions, chopped
Juice of 1 lemon
1 Tbs honey
2 Tbs chopped fresh coriander
4 Tbs olive oil
125g cherry tomatoes, chopped
1 cup chopped cucumber
Salt and pepper


Rinse mealie rice under cold water, then place into a pot, cover with cold water, add salt and bring to the boil.

Simmer for 40minutes, topping up water if necessary until maize rice is cooked through and tender.

Drain and set aside to cool.

Mix together mustard, spring onions, lemon juice, honey, coriander and olive oil.

Add tomatoes and cucumber then fold in the cooked mealie rice, season with salt and pepper to taste.
