Cream Doughnuts


Serves 12

For the dough:
2 cups flour
10g yeast
1/4 cup sugar
1/2 tsp salt
1 egg
1/2 cup milk
About 1/2 cup water
Oil for frying

For coating:
1 cup castor sugar

For the filling:
500ml whipping cream
1/4 cup icing sugar
2 tsp vanilla extract


Mix flour, yeast, sugar and salt.
Whisk egg and milk, then add to dry ingredients.
Mix well, adding enough water to form a soft, pliable dough.
Knead for 10 mins until smooth.
Cover and leave to rise until doubled in size.
Divide dough into 12 pieces, shape into long doughnuts.
Place onto floured tray, cover and leave to rise for 10mins.
Heat oil (170c), fry until evenly browned.
Drain on kitchen paper then dip into castor sugar, allow to cool completely.
Combine cream, icing sugar and vanilla, then whip to stiff peaks.
Cut a slit in cooled doughnut, then fill with whipped cream.
